Friday Recipe - Rob's Waldorf Salad

This is a really nice salad for the autumn making the most of the new season's apples and walnuts.

How much to make depends on if this is the main even or a side salad. If this is the main event, increase the quantities by half and a scrumptious addition is cubes of a nice sharp cheddar cheese.

What you need

1 to 2 Sweet Apples cored and cubed
3 or 4 Sticks of Celery cut into 1cm lengths
1 or 2 handfuls of chopped walnuts
Half an Iceberg Lettuce shredded
2 Tablespoons of good quality mayo
2 Tablespoons of grape seed (or similar) oil
1 Tablespoon of White Wine Vinegar
1 Teaspoon of Dijon mustard
Salt & Pepper


What to do

1. In a good sized serving bowl mix the Mayo, Vinegar, Oil, mustard and seasoning together until well blended. If necessary adjust with a little more oil and vinegar - you're aiming for thick pouring cream consistency.

2. Add the prepared apples, celery and lettuce and toss well making sure everything is well coated.

3. Sprinkle the chopped walnuts over the top.

Serve straight away as it won't keep. Once the dressing has got to the lettuce it will start to wilt. A Waldorf will go really well with cold cuts of pork - pork pie or anything like that. A nice glass of cider or light beer works well too!
