Friday Recipe - Bread and Butter Pudding
Good one for the cooler evenings now that autumn is upon us again. This is real comfort food - but made with wholemeal bread it's actually quite good for you!
What you need
6 thin slices of bread (preferably wholemeal) - crusts removed
50g Butter
50g Fruit (Dried or chopped fresh)
40g Sugar
2 Eggs
600ml Whole Milk
1/2 Tsp Nutmeg
1/2 Tsp Vanilla Essence
How to do it
1. Thickly butter the bread and cut into fingers.
2. Put half of the buttered bread into a 1 ltr buttered oven proof dish
3. Sprinkle with the fruit (whatever you are using) and half the sugar
4. Add the remaining bread (butter side up) and sprinkle on the remaining sugar
5. In a separate bowl beat together the eggs, milk, nutmeg and vanilla essence and tip over the bread.
6. Cover and place in the fridge for half an hour
7. Transfer to the oven and bake at 160 C for 45mins - 1hour or until golden brown and crisp on top.
