Friday Recipe - Dropped Scones
This is a nice quickie for the whole family - ideal for breakfast, a quick treat when the kids get home from school or just as a nice relaxed dessert. My kids like maple syrup, raspberry jam, cream but you could have anything you like - fruit, chocolate, caramel, bacon, tomato sauce, vinegar ... whatever! They are slightly sweet - but that doesn't stop some people! They're best hot straight from the pan but you can have them cold or reheat them in the toaster.
What you need
250g Self Raising Flour
1/4 Teaspoon Salt
50g Butter (room temp)
100g Sugar
2 Eggs beaten
A little milk
1/4 Teaspoon Vanilla Essence
Oil to cook with
How to put it together
1. Put the flour in a bowl with the butter and rub in (like making pastry)
2. Add the remaining dry ingredients and stir round
3. Add the eggs and vanilla essence and a couple of tablespoons of milk
4. Mix until you end up with a stiff batter.
5. You can add more milk if you want, but don't over-do it or you'll end up with pancakes.
6. Heat a little oil in a large frying pan over a medium to high heat and drop tablespoons of the batter mixture into the pan. They'll spread a little so give each dollop plenty of room.
Serve hot and enjoy!
