Friday Recipe - Tray Baked Salmon
This is a nice easy one for a special Christmas meal. It's an adaptation of a Jamie Oliver recipe and is nice and easy!
What you need:
Pieces of Salmon (steaks or fillets) one per person
Green Beans (a nice fist full per person) Par-cooked for 5minutes
A punnet of cherry tomatoes (one punnet does four people - do the maths if you've more or less to cater for)
A fist full of pitted olives
A small pot of anchovies
Olive oil
What you do:
1. Take a large roast tray drizzle a little oil and arrange the salmon to one side
2. put the green beans at the other end with the tomatoes, olives and anchovies
3. Drizzle with a little more oil (extra virgin olive oil is good for you so be generous!)
4. Place in a hot oven (220 C) for 15-20 minutes or until the salmon is done.
Serve with your favourite glass - something robust for this dish as the flavours are intense - try a Marsanne from Tahbilk or a well oaked chardonnay. A chilled light beer would do equally well if that is your taste.
